DISH: SPICED CITRUS SALAD
SERVES: FOUR
INGREDIENTS:
120 g pomelo, diced
120 g orange, diced
120 g sweet lime, diced
120 g kiwi fruit, diced
50 g red lettuce
80 g prunes
FOR THE DRESSING:
40 ml lemon juice
30 ml olive oil
30 ml honey
5 g crushed black peppercorn
5 g paprika powder
8 g black salt
4 g roasted cumin powder
10 g parsley
METHOD:
1.Combine the ingredients together for the dressing.
2.Combine the fruits together and mix in the dressing.
3.Serve chilled, garnished attractively.
DISH: WOK TOSSED SINGAPORE BROCCOLI
SERVES:FOUR
INGREDIENTS:
160 g broccoli florets
corn flour, to dust
10 ml soya sauce
20 g red peppers
refined oil, for deep frying
and sauteing
10 g chopped garlic
30 ml tomato ketchup
20 g red chilli paste
10 g chopped spring onions seasoning, to taste.
METHOD:
1.Dust the broccoli florets in the corn flour and deep fry.
2.In a work, take a little oil and saute the garlic. Then add the peppers and all the other ingredients.
3.Toss the broccoli in the sauce and serve hot.
DISH: GOLDEN VEGETABLES
SERVES:Four
INGREDIENTS:
100 g assorted vegetables seasoning , to taste
6 g garlic powder
4 g paprika powder corn flour, to dust
100 g tempura flour refined oil,for frying.
METHOD:
1.Season the vegetables and also rub in the garlic and paprika powders.
2.Dust the vegetables and deep fry in the batter made with tempura flour.
DISH: MALAY HITOKU
SERVES:Four
INGREDIENTS:
8 small skewers of dofu and vegetables
10 g garlic galangal paste
10 ml refined oil
2 g powdered basil
12 g hot curry powder
40 g peanut butter
30ml lemon juice seasoning, to taste
METHOD:
1.Combine all the ingredients and marinate the skewers.
2.Grill and serve

DISH: SOFT SHELL CRABS with LEMONY MUSTARD SAUCE.
SERVES:Four
INGREDIENTS:
Eight soft shell crabs
10 g paprika powder
20 g chopped garlic
30 ml lime juice
60 g butter
12 g spring onions
25 g mustard paste
seasoning, to taste.
METHOD:
1.Clean the crabs and rub in the seasoning and the paprika powder.
2.Melt the butter in a pan and saute the garlic. Add all the ingredients.
3.Add the crabs and saute well in the sauce and serve.

DISH: ROAST SPRING CHICKEN IN RICH PLUM SAUCE.
INGREDIENTS:
4 whole chickens
40 ml lemon juice
5 g paprika powder
5 g star anise powder
60 ml soya sauce
60 g brown sugar seasoning, to taste refined oil, to marinate and saute.
30 g chopped ginger
240 ml plum sauce
60 g butter
METHOD:
1.Marinate the whole chicken with seasoning, lemon juice, paprika powder, star anise, powder,
soya sauce, brown sugar and a little oil.
2.Rest the chicken overnight and roast in owen at 200 c
for 45 minutes .
3.Melt the butter in a pan,add the chopped ginger and saute.Add the plum sauce.
4.Adjust the consistency and seasoning .
5.Serve the chicken smothered lavishly wth the sauce.

DISH: STIR-FRIED FRENCH BEANS WITH ALMONDS.
SERVES:Four
INGREDIENTS:
420 g french beans
100 almonds, peeled refined oi, to saute
20 g ginger, chopped
20 g garlic, chopped
20 g onions, chopped seasoning, to taste
5 g crushed black peppercorn
60 g cherry tomato halves
METHOD:
1.String the beans and cut into one-inch lengths.
2.Blanch the beans and keep aside.
3.Heat some oil in a Wok. Saute the ginger, garlic and onion.
4.Add the beans, almonds and cherry tomatoes.
5.Add the seasoning, toss and serve.

DISH:EXOTIC SUSHI PLATTER
SERVES:Four
INGREDIENTS:
400 g boiled sushi rice
120 g salmon
4 prawns
120 g cuttle fish
10 g roasted sesame seeds
2 nori sheets
10 peppers, chopped Wasabi, to accompany
Japanese pickled ginger, to accompany
kikkoman soya sauce, to accompany.
METHOD:
1.Boil the sushi rice With salt and sugar and cool it.
2.Wrap the nori sheet and various seafood's attractively, With the help of sushi mat, coating With
either the peppers or sesame seeds.
3.cut and serve attractively With ginger, Wasabi and the kikkoman soya sauce and serve.
SCORPIO
Good food needs to be passionately prepared and should appeal to all the senses.Scorpions are the brave eaters of the zodiac.
DISH:BRAISED PRAWN IN AROMATIC BLACK PEPPER SAUCE.
SERVES:Four
INGREDIENTS:
600 g peeled prawns
60 g corn flour
refined oil, to fry and saute.
3 star anise
3 g red chilli
20 g chopped ginger
20 g chopped onions
20 g chopped celery
8 g crushed black peppercorn
90 ml oyster sauce
6o ml stock water
20 ml corn flour,dissolved in water seasoning, to taste.
METHOD:
1. Dust the prawns with the corn flour and deep fry.
2.Heat the oil in a wok, saute the whole star anise, red chilli and then the ginger, garlic, onion, celery, and black peppercorn.
3.Add the prawns, oyster sauce, stock and seasoning.
4.Add little corn starch, cook to reduce and serve.

DISH: MAPO TOFU
SERVES:Four
INGREDIENTS:
400 g diced silken tofu
240 g tenderloin mince
30 ml refined oil
5 g chilli flakes
40 g black bean paste
30 ml soya sause
30 ml Chinese cooking wine
20 g ginger, chopped
20 g garlic, chopped
20 g onions, chopped
60 ml stock
30 ml corn flour, dissolved seasoning, to taste.
METHOD:
1. In a wok , saute the chilli in oil, add the garlic, ginger, onions, and saute.
2. Add the tenderloin mince and saute well.Add the black bean paste, soya sauce, chinese wine
and seasoning.
3.Add the tofu and stock and simmer for sometime. Add the seasoning and cornflour.Serve.
CAPRICORN
The only sun sign that can digest almost everything.The earthy capris are the 'chicken and potato' lovers.
DISH:PEPPERED LAMB ON GARLIC STEAMED NOODLES
SERVES:Four
INGREDIENTS:
400 g noodles
30 ml refined oil
320 g leaned lamb, chopped
20 g ginger,chopped
20 g garlic, chopped
20 g onions, chopped
20 g spring onion, chopped
8 g black peppercorn, crushed
30 ml chinese, cooking wine
30 ml soya sauce
20 g red chilli paste
seasoning, to taste
20 ml corn flour
METHODS:
1.Boil the noodles and keep hot in a steamer.
2.Saute the ginger, garlic, onion and spring onions in the oil.
3.Add the lamb and saute well.
4.Add the rest of the ingredients and reduce.
5.Serve the lamb piping hot on top of the noodles.
AQUARIUS
There is so much variety that it is too confusing for aqurians. They end up making bizarre choices from the menu.
DISH:EGGPLANT SATAY
SERVES:Four
INGREDIENTS:
600 g aubergines, large
10 g garlic and galangal paste
3 g basil, powdered
20 g hot curry powder
3 g turmeric powder
5 g paprika powder
20 ml refined oil
90 ml peanut butter
30 ml lemon juice
seasoning, to taste
METHOD:
1.Cut the aubergines into wedges and deep fry them till soft.
2.Marinate them wth the rest of the ingredients and grill.
3.Servr hot.
